Ingredients:
peeled yellow – pulp peaches
small meringues – toasted sliced almonds
whipped cream – peach jam or jelly
puréed strawberries flavoured with maraschino
Method:
Whip the cream taken straight from the refrigerator; gently fold in the diced
peaches and the small meringues broken into small pieces. Form a small dome
on each plate with the mixture, then arrange half a stoned peach on top. Spread
a little jam on the half peach to give a glossy effect, and place a few almonds
on top. To finish the dessert, dilute the puréed strawberries with maraschino
and arrange this around the domes.
